Onigiri, lightly pickled daikon stems and salted kombu

“Karaage(Japanese fried chicken), grated daikon, yuzu ponzu”

It has been so long since I cooked and ate Karaage at home. Tonight, I made out karaage in a fancy way. It is tasty as is. I have an idea: add grated daikon and a dash of yuzu ponzu. It feels much lighter and more refreshing this month. I enjoy it so so much. I do it again and again!!

The yuzu Ponzu we stocked has a bit of dashi umami, and its mild, citrusy flavour pairs well with so many dishes. It is a delicious condiment!

Chicken thigh marinated in Shiokoji, barley shoyu koji, and ginger for about 10 minutes, then coated with Potato starch and flour. Then fry it!

Sweet sesame miso with grilled salmon❣️

This dish was our recent tasty discovery and has become my favourite way to enjoy salmon. The sweet sesame miso has a slightly satay flavour, which goes really well.

Simply spread the sweet sesame miso on a piece of salmon and cook it in the air fryer at 160 °C for about 20 minutes, checking occasionally.

“A load of mushrooms in miso soup, sesame oil and spring onion”

Mushrooms are one of my favorite ingredients in miso soup. The texture and flavours go well with miso.

Yesterday, I bought some tasty mushrooms from @mushroompeoplefarm at the Geelong City Market. On my way home, I started thinking about how to use them. Several ideas came to mind, and tonight I made miso soup with a mix of different mushrooms. It turned out hearty, and a dash of sesame oil added a wonderful flavour.

Cooking miso soup with many ingredients can transform it into a complete meal. It is the best way to enjoy the cold weather.
