We had a big 3-day Grand Final long weekend.
Thank you very much to everyone who stopped by our stall at the Bendigo and Ballarat markets!

We hope you had a lovely weekend and enjoyed cooking with our condiments and miso at home!!

I did a big production run of our cauliflower pickles! We make them from our anzuboshi by-product; when apricots are added, they release juice that we use to pickle them for about 3 weeks. That juice becomes part of our exclusive pickling liquid! We created it with cumin and bay leaf for a nice flavour touch!

It's our very first market in Bendigo, and we're very excited to be there.

“Tri-coloured rice bowl + egg”
- Smoked garlic miso roasted Tomato,
- Peas cooked with sesame oil and seasonings
- Chilli miso-flavoured pork mince over the rice

Tomato marinated with smoked garlic miso and oil. And a bit of sugar to add sweetness.

Cook in the airfryer at about 180 °C for 15- 20 min, until soft. Stir it often during cooking.

I enjoy preparing roasted vegetables with smoked garlic miso and oil, using various types of veggies. The flavor isn’t overwhelming; it adds a subtle hint of garlic and umami. Tomato is one of my favorites lately. It’s juicy and sweet, and versatile—great for pasta, lasagna, soup, and salads.

Rice cooked with plenty of fresh and dried mushrooms.

The fresh mushrooms are from @mushroompeoplefarm at @geelongcitymarket.

Rice 1.5cups
Organic Soy sauce 2tbsp
Kaokao miso 2tsp
Mirin 2tbsp
Water 260cc

Add fresh mushrooms. Then cook rice.

Top with chopped spring onion. I charred the miso paste to give it a toasted flavour, then added a bit of it.

Our dinner tonight was very simple and felt a bit like Japanese brekky style. But the mushroom rice was very flavourful and had a nice texture. The salmon berry was quite fatty, but it paired well with other simple, flavourful dishes.

Dinner on a day with an almost empty fridge.

There was some chilli-miso pork mince and a boiled egg…

I topped it with the rice. Even this simple pairing is incredibly tasty.
