Winter comfort food❣️

Slow-cooking Ossobucco with polenta.
Ossobucco has been marinated in Shio koji overnight before cooking. The shio koji tenderises the meat and gives rich umami to the dish. The meat was melting in the mouth. So delicious. It's a perfect wet and cold Sunday dinner.

“Japanese sweet potato miso soup”

Currently, I am working with a new type of koji.
I usually produce just the white type of koji. That suits miso, amazake, shio koji, and so on.

This one is black koji, primarily used for Japanese spirits like “shochu” and “Awamori”. Those spirits are from warm-climate regions.
Its defining feature is the production of a large amount of citric acid, which prevents bacterial contamination during fermentation.

The process of making koji is similar, but it is interesting to see it change the colour little by little, becoming darker over time. So fascinating❣️

I’m very excited to discover what I can do with it.

I made Soybean koji for the first time in a while. I was so impressed by how fluffy it was. It was like a very thick, fluffy jacket. So cute, each of them⛄
