The mornings and evenings have become particularly cold. But in koji making, it's the start of the best production time of the year, through the spring.

The koji production Day 2: the koji spot was activating overnight, creating heat on its own and producing a sweet, beautiful aroma. When the rice is inoculating successfully, you will know straight away when you open the koji room door. These mornings are my favourite moments.

Mapo-style vermicelli with minced meat and vegetables.

Quick, easy-to-make Mapo-style dish using our chilli miso paste.
You can cook it with any protein, just vegetables, or tofu. Our favourite way is with pork or chicken mince and vegetables. It’s great served over rice or noodles. Simple but really satisfying.

Even I don't feel like cooking if there's chilli miso paste in the fridge. I don't mind cooking though😀

Day 2 of Miso-cured egg yolks.

Have you tried miso egg yolks?
It is savoury and umami-rich, making it very tasty. Curing can take anywhere from 2 days to a week or more. During this time, the texture and taste will evolve, allowing you to enjoy a variety of flavours as the curing process progresses.

I used a curing bed with 150g sweet miso + 1.5tsp Mirin; mix all. Then add the egg yolks and refrigerate. Then wait….
