Sweet sesame miso with grilled salmon❣️

This dish was our recent tasty discovery and has become my favourite way to enjoy salmon. The sweet sesame miso has a slightly satay flavour, which goes really well.

Simply spread the sweet sesame miso on a piece of salmon and cook it in the air fryer at 160 °C for about 20 minutes, checking occasionally.

“A load of mushrooms in miso soup, sesame oil and spring onion”

Mushrooms are one of my favorite ingredients in miso soup. The texture and flavours go well with miso.

Yesterday, I bought some tasty mushrooms from @mushroompeoplefarm at the Geelong City Market. On my way home, I started thinking about how to use them. Several ideas came to mind, and tonight I made miso soup with a mix of different mushrooms. It turned out hearty, and a dash of sesame oil added a wonderful flavour.

Cooking miso soup with many ingredients can transform it into a complete meal. It is the best way to enjoy the cold weather.

Kakiage (veggie tempura) on the soba noodles.
It is crunchy and flavourful. I love to create it with any veggies. Tonight, we got a veggie from our garden. It wasn't too much going on, but it was enough for our Kakiage! And the soup is made with Yugeta dashitsuyu (soup base)!

Chrysantimum, chard, leek and a bit of dry shrimp.

Roasted pumpkin, smoked garlic miso soup

I made heartwarming soup to fix a cold.
This soup is the best way to keep the fridge stocked.

I roasted a pumpkin with some Shiokoji in an air fryer at 200°C for about an hour. Then I separated the skin and seeds, and shallow-fried sliced onion, adding pumpkin, chicken stock, and some cream. Next, I added maple syrup and smoked garlic miso (not too much), blending it all with a hand blender for a smoother texture. Finally, I added some spice (I used haram masala).
