Kuzuryu Black Maitake — Dried, from Fukui, Japan
Black maitake is a rare mushroom that is very seldom found growing wild, at the foot of oak trees in Japan’s old-growth forests. After years of research, Shoryu, a grower in Ono, Fukui, learned how to create the ideal environment to cultivate it — and named it Kuzuryu Maitake.
Shoryu handles every step by hand, from preparing the growing blocks to harvesting and packing. Grown in Ono’s natural surroundings with clean mountain water, then dried to bring out a deep, earthy aroma and rich umami.
We source this maitake directly from the grower and bring it to Australia ourselves.
How to use: Soak in water to rehydrate, then add to miso soup, stir-fries, rice dishes or hot pot. Keep the soaking water — it makes a flavourful broth.
